Semi-Cured Sheep Cheese D.O.

It is a pure semi-cured sheep cheese with Denomination of Origin La Mancha, of pressed paste made with pasteurized milk from the La Mancha breed, with a maturing period between 3 – 4 months.

Its bark is hard and the paste varies in color from white to yellowish ivory. Taste slightly acidic and strong.
