Semi-Cured Mixed Cheese

A semi-cured cheese made from pressed sheep, goat and cow milk, with a maturing period of between 6 – 9 months.

Its bark is soft and the paste varies in color from white to ivory. Acidic flavor, slightly bitter and creamy.
