Semi-Cured Artisan Cheese

It is a semi-cured sheep cheese with pressed paste made from raw sheep’s milk, with a maturation period between 3 – 4 months and a subsequent minimum maturation of 60 days with extra virgin olive oil.

Its bark is hard and the paste varies in color from white to yellowish ivory. Taste slightly acidic.
