Cured Mixed Cheese

A cured cheese made from pressed sheep, goat and milk, with a maturing period of between 3 – 4 months and a subsequent minimum maturation of 60 days with extra virgin olive oil.

 

Its bark is soft and the paste varies in color from white to yellowish ivory. Acidic and slightly bitter flavor due to the extra virgin olive oil that increases the curing process.
