Cheese in Olive Oil

It is a sheep cheese in extra virgin olive oil, of pressed paste made with raw sheep’s milk, with a maturing period between 5 – 6 months and a subsequent minimum maturation of 100 days with extra virgin olive oil.

Its bark is hard and the paste varies in color from white to yellowish ivory. Acidic and slightly bitter flavor due to the extra virgin olive oil that increases with healing.
