Aired Goat Cheese

It is a cheese made from goat’s milk from pressed paste made from goat’s milk, with a maturation period of between 3 – 4 months.

Its bark is soft and the paste is flexible in its color from white to ivory yellowish. Acidic and slightly bitter flavor due to the extra virgin olive oil that increases with the curing process.
